Common Types of Exhaust Hoods

Kitchen Exhaust Cleaning is a mechanical fan that hangs above a stove to remove airborne grease, combustion products, fumes, smoke, heat and steam. It also filters odors and may be equipped with a fire suppression system to protect the building from grease fires. A vent hood can be vented to the outside or to a duct, or it can use a recirculation system (which recycles air into the kitchen).

Common Types of Exhaust Hoods: Which One Do You Have?

There are two main types of ventilation hoods: Type I and Type II. Both can be used with non-grease-producing appliances to exhaust steam, heat and odors. Type II hoods are often used for pizza ovens, for example.

A vent hood has three basic parts: the filter, blower, and ductwork. The filter traps grease and other contaminants before they reach the blower, which moves the contaminants through a duct. The ductwork directs the air to an exhaust outlet, which is often connected to the building’s heating and cooling system.

Most commercial vent hoods require a make-up air supply system to replace the exhaust air that is exhausted from the hood. The makeup air is usually a combination of 100% outside, filtered and/or untreated indoor air, heated or cooled, or recirculated kitchen air with a charcoal filter.
